Kit's Chocolate Mousse Recipe

INGREDIENTS
18 oz Semisweet chocolate (about 3 cups)
2 cups Heavy cream; well chilled
6 Eggs
2 Tbs. Confectioner's sugar
2 Tbs. Creme de cacao
1 Tbs. Vanilla extract

DIRECTIONS
0. go out and buy a Kitchen Aid mixer and 3 bowls. Chill the bowls beforehand.
1. Melt the chocolate in the microwave and set it aside to cool. (1-1/2 min in microwave!)
2. Combine the cream, the confectioners sugar, vanilla extract and creme de cacao in one bowl. Whip this mixture until it forms medium-stiff peaks. Return bowl back into the refrigerator.
3. Separate 4 of the eggs into two bowls. Add 2 remaining eggs to the yolks and refrigerate.
4. Beat the egg whites until you have firm peaks. Return to refrigerator.
5. Beat the yolks until thick and lemon colored, around 5 minutes.
6. Quickly add a scoop of the whipped cream and the cooled melted chocolate to the egg yolks. Beat until smooth, then add the remaining cream. When it is fully incorporated, fold in the whites until just blended.
7. This mousse can be poured into small individual serving dishes or into 1 larger dessert dish. Chill at least 4 hours before serving. (Chilling it overnight intensifies the flavor.) The mousse may be frozen for up to 2 weeks. Remove from the freezer and let it sit in the refrigerator overnight before serving.
